We love that their menu is vegan and vegetarian-friendly, and we especially love their vegan cinnamon rolls that are to die for. Their Huevos Rancheros has also been voted “Best In the Springs” seven years in a row, their coffee is a delicious, organic dark roast blend, and they offer a full bar including a selection of Mimosas and Bloody Marys.

With a menu intentionally designed to be vegan and vegetarian friendly, you will not feel as if your dietary needs are an afterthought at this cafe located in the vibrant neighborhood of Manitou Springs. Each omelette is made with three eggs, skillet prepared, and served with your choice of O.P. potatoes, fruit medley, or yogurt and a whole wheat English muffin. You can create your omelette or try one of Omelette Parlor’s specialty omelettes including the W.J. Pamler, Founder with bacon, cheddar cheese, and O.P. potatoes stuffed inside served with sour cream on the side and The Denver, onions and green peppers joined with ham and cheddar cheese.

Now let’s talk about some of their specials, and yes, these are only some of them. They offer half priced omelettes every morning between 6am and 7am, half priced Bloody Mary’s all day Sunday, and on Mondays, kids eat free. Biscuits do, in fact, go with everything. At least at Denver Biscuit Co. If you like biscuits, don’t even think twice about going here. If you aren’t sure if you do, come try them for yourself.

Denver Biscuit Co. offers freshly made buttermilk biscuits in the form of biscuit sandwiches, biscuit plates, biscuit pot pie, biscuit French toast, you know the drill. Menu favorites include The Franklin, a biscuit sandwich stuffed with buttermilk fried chicken, bacon, and cheddar cheese smothered in house made sausage gravy or vegetarian mushroom gravy, the Biscuit French Toast with house made honey butter and a side of maple syrup, and the Strawberry Shortcake, a biscuit smothered with sweet strawberry sauce and topped with whipped cream.

They even have Giant Biscuit Cinnamon Rolls. This place is a must-try.

This Colorado Springs restaurant was established in the 1970's, and is today run by its current owner who started working here in 1983 as a waitress and wanted to keep the business alive after the original owner fell ill.

It’s a heartwarming history, but the food they serve is even sweeter. Sandy’s offers homemade breads, cinnamon rolls, biscuits, and more. Their goal is to serve good wholesome comfort food with friendly service, with the hope of brightening your day.

Menu favorites include Sandy's Country Breakfast, which comes with hash browns and toast, Chicken Fried Steak served with three eggs, homemade Biscuits & Gravy, French Toast made with homemade bread battered in egg, vanilla, honey, and cinnamon and grilled golden brown, and their homemade Cinnamon Roll warmed up and smothered in homemade cream cheese icing.

If you want to support a small business, you should support Sandy’s. It’s been a local favorite for decades, and with your support it can stay that way.

Sandy’s is open 5:30am - 2:30pm Monday through Friday, 5:30am - 2:00pm on Saturday, and 6:00am - 1:00pm on Sunday.
