Cut four 65g spring onions into diagonal lengths.
Cook the noodles in hot water. In the meantime, heat half the oil in a wok over high heat, stirring the meat for 30 seconds or until browned.
Place on a platter and set away. Add the remaining oil to the wok after that. The onion and ginger should be stir-fried until tender. Cook covered for two to three minutes, adding a drop of water to prevent burning.
Add the remaining ingredients and cook them well. Toss the drained noodles in the wok before adding the beef, the other ingredients mixture, and spring onions. Stir-fry for a few minutes to fully reheat. Serve after liberally peppering with black pepper.
