Hewn is a small, independently-owned and operated bakery in Evanston. All products are made from scratch using organic flour and grain. The breads are all hand-mixed, hand-shaped, and naturally fermented. Hewn also collaborates with local farms to source their grains, produce, and dairy. The bread selections rotate daily. Each day, the menu consists of the store’s country loaf, blonde country loaf, and four or more rotating specialty loaves. Everything from challah to caramelized onion rye has been featured.
