Hewn is a small, independently-owned and operated bakery in Evanston. All products are made from scratch using organic flour and grain. The breads are all hand-mixed, hand-shaped, and naturally fermented. Hewn also collaborates with local farms to source their grains, produce, and dairy. The bread selections rotate daily. Each day, the menu consists of the store’s country loaf, blonde country loaf, and four or more rotating specialty loaves. Everything from challah to caramelized onion rye has been featured.

Many of the interior furnishings were salvaged and repurposed from old material in order to create a genuine, rustic atmosphere for customers. The owner’s eye for design has allowed the store’s interior to accurately reflect the warm, rustic nature of their bread.

“The vibe/ambiance is honestly just a cherry on top compared to how fantastic all their baked goods are. Their breads are fantastic. Their croissants are so good they make me want to yell random words when I'm eating them.” - Yelp Review

They also offer a comprehensive breakfast menu comprised of savory items such as the Quiche, Spanish Tortilla, and the Sourdough Flatbread.

“I'm so impressed. This place is tiny but the giant windows and minimalist design really make the small dining room much larger than it is. They are really putting out quality and technical pastries. We got the brioche and the quiche. They change the spread on the brioche toast but this time it was some sort of sweet potato jam and frangipane. It was so tasty and not overly sweet.” - Yelp Review
